This policy explains what personal information Gochiso Kitchen collects, why, how long we keep it, and what you can ask us to do with it. It covers everything we run: our website at gochisokitchen.com, the class-waiver service at waiver.gochisokitchen.com, gift-certificate and class payments, and the email we exchange with you.
We are a small cooking-class business. We collect what we need to run classes safely and keep the records the law expects us to keep — nothing else. We do not sell your information, and we do not share it for advertising.
What we collect, and when
When you browse gochisokitchen.com
Our website is hosted by Squarespace, which records standard technical information about each visit: IP address, browser and device type, pages viewed, and the page you arrived from. Squarespace sets cookies needed to run the site and to measure traffic. Some pages embed content from Instagram and load fonts from Adobe Typekit, which lets those companies see that your browser requested content. You can block or delete cookies in your browser settings; the site still works.
When you contact us or reserve a class
Your name, email address, phone number if you give it, the class and date you are asking about, and whatever you write to us. This lives in our email (Zoho) and, for reservations, in our own notes.
When you sign a class waiver
This is the most detailed information we hold, so it gets its own list. To sign a waiver you give us:
- your name, phone number, email address and postal address;
- an emergency contact's name and phone number;
- any allergies or dietary restrictions you tell us about;
- your signature, typed or drawn;
- your confirmation that you are 18 or over. We do not ask adults for a date of birth at all;
- if you are signing for anyone under 18, each minor's name and date of birth — we use the date only to check that they are under 18, then record their age on the day of the class and discard the date itself. We never store a date of birth;
- whether you opt in to our emails, and whether you give permission for photos or video.
Because a signed waiver is a legal record, we also record how it was signed: the date and time, the IP address and browser of the device used, and cryptographic checksums of the document and of the information you entered. Those checksums let us prove later that the record has not been altered. All of it appears in the PDF copy we email you.
If you have signed with us before, entering your email address makes us send you a one-time link; opening it fills the form in from your last waiver. We do that so nobody can see your details just by typing your email address.
When you buy a gift certificate or pay for a class
Your name and email address, the recipient's name and email address if you are sending a gift, the amount, and any message you write on the certificate. Card payments are processed by Stripe and your full card number never reaches us — we see only the last four digits and whether the payment succeeded. We keep a record of the sale.
When you subscribe to our newsletter
Your email address and name, held by Mailchimp. Every newsletter has an unsubscribe link, and you can also just ask us.
Why we use it
- To run the class you booked, and to reach you or your emergency contact about it.
- To keep you safe in class — this is why we ask about allergies and dietary restrictions.
- To hold a signed record of the terms you agreed to, which is a legal document we may need to rely on.
- To take payment and to issue and redeem gift certificates.
- To answer your messages.
- To send you news about classes, only if you asked us to.
- To use class photographs or video that may include you on our website and social media, only if you gave permission on your waiver. You can withdraw that permission at any time by emailing us.
How long we keep it

Who else can see it
We use a small number of companies to run the business. They may process your information only on our instructions:

We may also share information when the law requires it, or when we need to establish or defend a legal claim — which is the reason we keep waivers.
Otherwise: no. We do not sell, rent or trade your information, and we do not share it with advertisers.
Your choices
You can ask us to:
- send you a copy of the information we hold about you;
- correct something that is wrong — for a waiver this means signing a new one, because a signed document cannot be edited;
- delete your information. We will do so, except where we are required to keep a record: a signed waiver has to stay, but we will remove the parts we do not need (your phone number, address, emergency contact, allergy notes and marketing preference) and tell you what was kept and why;
- stop emailing you — unsubscribe from any newsletter, or just ask.
Email info@gochisokitchen.com. We reply within 30 days, and we will not treat you differently for asking.
Security
Connections to our website and waiver service are encrypted. Waiver records are stored on a server only the owner can reach, with encrypted off-site backups, and every administrator access is logged. Signed waivers cannot be edited — a correction is a new signature. We do not store card numbers.
Children
We do not direct our website at children. We collect a minor's name, and their age at the time of the class, only from their parent or legal guardian, as part of the guardian's waiver, so that we know who is in the class and can keep them safe. We do not keep children's dates of birth.
Changes
If we change this policy we will post the new version here with a new effective date. If the change is significant and we have your email address, we will tell you.
